- 8 ounce cooked crabmeat, picked over for cartilage
- 1/2 c. fresh breadcrumbs
- 1/2 c. finely minced sweet red pepper
- 2 Tbsp. minced green onion
- 2 Tbsp. minced red onion
- 1 tsp finely minced fresh ginger
- 1 Tbsp. finely minced garlic
- 1 Tbsp. rice wine vinegar
- 1 x salt and pepper
- 4 lrg Belgian endive

- In a medium bowl, gently combine crabmeat, breadcrumbs, red peppers, onions, ginger, garlic, and vinegar. Add in salt and pepper to taste.
- Cut endives in half lengthwise and remove cores. Fill endive "boats" with stuffing.
- Preheat grill to medium. Oil racks. Grill endive for 5 min, or possibly till bottom is slightly charred and filling is heated through.
