  1. Heat the bacon fat - saute smoked turkey for a little brown color
  2. Add the onions and cook till translucent
  3. Add the sauerkraut, paprika, tarragon - cook for a few minutes
  4. Add the wine, stock, some black pepper, and heat to boiling point
  5. Reduce heat to simmer to heat through
  6. Stir in sour cream just before service - do not boil but heat through
  7. Garnish with chopped fresh parsley
