- 3/4 c. brocolli florets
- 22 ounce uncooked fresh shrimp peeled, deveined
- 1 lb cooked small pasta shells
- 2 med carrots peeled, diced
- 1/2 med red onion diced
- 4 Tbsp. minced cilantro
- 1 x red pepper julienned
- 1 x yellow pepper julienned
- 1 x green pepper julienned
- 8 lrg cherry tomatoes halved
- 4 med celery stalks diced
- 4 x scallions minced
- 2 Tbsp. chopped garlic
- 12 lrg pitted black olives
- 1/2 lb cooked sea scallops
- 1/2 lb precooked crab legs
- 1/2 c. extra virgin olive oil
- 1/3 c. red wine vinegar Freshly-grnd black pepper to taste

- Blanch brocolli florets by placing in boiling water. Turn off the heat, wait 1 minute and drain brocolli. Pour cold water over the brocolli to stop the cooking process and drain again.
- Boil the shrimp till it just turns pink. Combine the pasta and vegetables in a large salad bowl. Add in the cooked seafood and toss with the pasta and vegetables.
- Combine the oil, vinegar, and pepper. Pour the dressing over the salad and chill for several hrs before serving.
- This recipe yields 12 servings.
