- 2 x Boneless chicken breasts
- 1/2 c. "Oven Fry" for Pork or possibly chicken(No Substitutions)
- 1/2 Tbsp. Italian seasoning
- 1/4 c. grated Parmesan cheese
- 1 x egg Extra virgin olive oil

- Flatten chicken to about 1/4 to 3/8 of an inch thick. in a shallow bowl, combine bread crumbs, Parmesan cheese and Italian seasoning. in another bowl, beat the egg. Dip chicken into egg, then coat with crumb mix. I use a spoon to coat chicken with the crumb mix gently pressing crumbs onto chicken. Preheat a frying pan with about a 1/2 c. of extra virgin olive oil. add in more when necessary. brown on medium heat till nicely browned and juices run clear.
- This is one of our favorite chicken recipes. It is very moist and full of flavor! you can add in a slice of tomato on top when chicken is done, then add in some mozzarella on top of which. I sometimes serve with spaghetti and a nice loaf of fresh bread. or possibly mashed potatoes and stuffing. The possibilities are endless.
