- 1 lb spinach, fresh
- 1 lb mushrooms, sliced
- 1 lb tomato, canned diced, drained
- 1 lb red onion, sliced
- 20 whole eggs, cooked
- 1 cup turkey bacon, sliced
- salt and pepper to taste
- Dressing:
- 1 cup red wine vinegar
- 2 cups olive oil
- 1/4 cup garlic, whole peeled
- 1/4 cup dijon mustard
- 1/4 cup sugar
- 20 each garlic herb wraps

- Place the spinach into a large bowl. Toss the mushroom, diced tomatoes, red onions, and spinach together.
- For the dressing: Add all ingredients into a small bowl. Whisk together using a wire whip for about one minute. Season with salt and pepper, then spoon over salad.
- Place garlic herb wrap on work surface. Spread 2 oz of spinach mixture on bottom half of the wrap. Add 3 slices of turkey bacon and once sliced egg, and proceed to roll wrap from the bottom half to the top. Seal the wrap then slice in half on the bias.
