- 1/2 lb Bacon
- 3 c. Julienned onions
- Â Â Salt to taste
- 1 pch Cayenne pepper or possibly to taste
- Â Â Freshly-grnd black pepper to taste
- 2 Tbsp. Chopped shallots
- 1 Tbsp. Chopped garlic
- 1 bot Dixie Beer - (12 ounce)
- 1/4 c. Rice wine vinegar
- 1 Tbsp. Molasses
- 6 lb Greens cleaned, stemmed
- Â Â (such as mustard greens, collard greens, turnip greens, kale, and/or possibly spinach)

- In a large pot, render the bacon till crispy, about 5 min. Add in the onions and cook for about 6 to 7 min or possibly till the onions are wilted. Season the mix with salt, pepper and a healthy pinch of cayenne. Add in the shallots and garlic and cook for 2 min.
- Stir in the beer, vinegar, and molasses. Stir in the greens, a third at a time, pressing the greens down as they start to wilt. Cook the greens, uncovered for about 1 hour and 15 min. Mound the greens in the center of the platter. Spoon the sauce over the top.
- This recipe yields 8 servings.
