,%20which%20is%20a%20great%20source%20of%20inspiration%20to%20me.%20I%20have%20used%20cranberries%20%E2%80%93%20which%20give%20the%20biscuits%20a%20slightly%20tart%20edge%20%E2%80%93%20instead%20of%20dried%20sour%20cherries,%20which%20are%20almost%20impossible%20to%20find%20in%20South%20Africa.%20In%20the%20original%20recipe%20they%20also%20added%20natural%20almond%20extract,%20but%20as%20that%20is%20not%20commercially%20available%20here%20and%20I%20don%E2%80%99t%20recommend%20the%20artificial%20alternative,%20I%20have%20left%20it%20out.%3C/p%3E%3Cp%3EI%20though%20that%20this%20was%20my%20lucky%20day%20as%20I%20had%20just%20bought%20dried%20sour%20cherries%20from%20a%20new%20supplier.%20I%20followed%20Sam%E2%80%99s%20method%20to%20a%20tee%20but%20the%20mixture%20was%20sloppy%20and%20I%20could%20not%20shape%20the%20biscuits.%20I%20put%20a%20batch%20onto%20my%20baking%20tray%20and%20added%2060g%20ground%20almonds%20to%20the%20rest%20of%20the%20mixture,%20until%20the%20mixture%20was%20firm%20enough%20to%20shape.%20I%20had%20only%20made%20half%20of%20the%20recipe%20which%20is%20what%20I%20often%20do%20when%20testing%20recipes%20that%20can%20easily%20be%20halved%20without%20affecting%20the%20outcome.%20I%20then%20made%20the%20rest%20of%20the%20biscuits%20as%20per%20Sam%E2%80%99s%20instructions.%20Below%20is%20the%20first%20go,%20showing%20the%20ones%20I%20made%20from%20the%20book,%20and%20the%20ones%20I%20made%20by%20adding%20more%20ground%20almonds.%20Not%20having%20ever%20tasted%20these,%20I%20must%20tell%20you%20that%20they%20were%20quite%20firm.%3C/p%3E%3Cp%3EFirst%20Attempt%20At%20Amaretti%20Biscuits%3C/p%3E%3Cp%3EI%20then%20reached%20out%20to%20my%20network%20and%20a%20friend%20sent%20me%20the%20original%20recipe.%20I%20saw%20that%20the%20only%20difference%20between%20the%20two%20recipes,%20other%20than%20the%20almond%20extract,%20was%202%20teaspoons%20of%20honey.%20I%20immediately%20wondered%20if%2010mls%20of%20one%20ingredient%20could%20really%20make%20a%20recipe%20work?%20Once%20again%20I%20made%20half%20a%20batch%20and%20noticed%20in%20the%20method%20that%20they%20make%20a%20meringue%20with%20the%20honey%20and%20egg%20white.%20The%20recipe%20totally%20worked%20and%20Dave%20and%20I%20enjoyed%20these%20soft%20morsels%20throughout%20the%20day.%3C/p%3E%3Cp%3ESecond%20Attempt%20At%20Amaretti%20Biscuits%3C/p%3E%3Cp%3EI%20have%20contacted%20the%20publisher%20for%20permission%20to%20reproduce%20the%20recipe%20on%20my%20blog,%20but%20as%20I%20have%20not%20heard%20back%20from%20them%20I%20decided%20to%20go%20ahead%20and%20make%20a%20slightly%20firmer%20biscuit,%20as%20I%20actually%20preferred%20them.%20I%20have%20also%20added%20in%20more%20sour%20cherries,%20as%20you%20can%20never%20have%20enough%20of%20them%20in%20my%20opinion.%20If%20you%20cannot%20get%20hold%20of%20sour%20cherries,%20use%20cranberries,%20dried%20apricots%20or%20even%20blueberries%20instead.%20I%20also%20used%20a%20little%20bit%20of%20cocoa%20powder%20to%20dust%20the%20amaretti%20biscuits.%3C/p%3E%3Cp%3E100g%20ground%20almonds%2060g%20caster%20sugar%20-%20I%20used%20fructose%20Finely%20grated%20zest%20of%201%20lime%20A%20small%20pinch%20of%20salt%2060g%20dried%20sour%20cherries,%20roughly%20chopped%201%20egg%20white%208g%20honey%2020g%20icing%20sugar,%20sifted,%20for%20rolling%201g%20cocoa%20powder%20for%20rolling%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20170%C2%B0%20Celsius%20Place%20the%20ground%20almonds,%20caster%20sugar,%20zest%20and%20salt%20into%20a%20bowl%20Mix%20to%20combine%20and%20make%20sure%20you%20break%20up%20any%20lumps%20Add%20the%20cherries%20and%20mix%20in%20Place%20the%20egg%20white%20and%20honey%20into%20a%20mixing%20bowl%20Whisk%20until%20soft%20peaks%20form%20Gently%20fold%20the%20egg%20whites%20into%20the%20ground%20almond%20mixture%20Place%20the%20icing%20sugar%20and%20cocoa%20powder%20into%20a%20bowl%20Mix%20well%20Using%20a%20spoon,%20scoop%20up%20the%20biscuit%20dough%20Drop%20into%20the%20icing%20sugar%20mix%20Roll%20to%20coat%20completely%20Place%20onto%20a%20lined%20baking%20tray%20Place%20the%20baking%20tray%20into%20the%20oven%20and%20bake%20for%2015%20minutes%20Remove%20from%20the%20oven%20and%20allow%20to%20cool%20on%20the%20tray%20%203.3.3077%3C/p%3E%3Cp%3EClick%20on%20the%20links%20for%20conversions%20and%20notes.%3C/p%3E%3Cp%3EWhat%20I%20blogged%20July%2027:%3C/p%3E%3Cp%3ETandy%3C/p%3E%3Cp%3ETop%20of%20Page%3C/p%3E%3Cp%3EVN:F%20[1.9.22_1171]%3C/p%3E%3Cp%3ERating:%200.0/10%20(0%20votes%20cast)%3C/p%3E%3Cp%3ELike%20Loading...%3C/p%3E%3Cp%3ERelated%3C/p%3E){kind=link}
