  • 1/2 lb Bacon
  • 3 c. Julienned onions
  •     Salt to taste
  • 1 pch Cayenne pepper or possibly to taste
  •     Freshly-grnd black pepper to taste
  • 2 Tbsp. Chopped shallots
  • 1 Tbsp. Chopped garlic
  • 1 bot Dixie Beer - (12 ounce)
  • 1/4 c. Rice wine vinegar
  • 1 Tbsp. Molasses
  • 6 lb Greens cleaned, stemmed
  •     (such as mustard greens, collard greens, turnip greens, kale, and/or possibly spinach)

  1. In a large pot, render the bacon till crispy, about 5 min. Add in the onions and cook for about 6 to 7 min or possibly till the onions are wilted. Season the mix with salt, pepper and a healthy pinch of cayenne. Add in the shallots and garlic and cook for 2 min.
  2. Stir in the beer, vinegar, and molasses. Stir in the greens, a third at a time, pressing the greens down as they start to wilt. Cook the greens, uncovered for about 1 hour and 15 min. Mound the greens in the center of the platter. Spoon the sauce over the top.
  3. This recipe yields 8 servings.
