Ингредиенты
- 2 med Onions -- sliced
- 2 x Garlic clove chopped
- 1/4 c. Veg. oil
- 2 sm Zucchinis -- in 1/2" slices
- 3 med Tomatoes -- diced
- 1 sm Eggplant, peeled -- cut in
- 1 x " cubes
- 1 lrg Green pepper -- cut in Strips
- 2 Tbsp. Minced fresh parsley
- 2 tsp Salt
- 1/2 tsp Basil leaves -- dry (try fresh if you have it!)
- 1/8 tsp Pepper (we use the warm stuff!)

- Saute/fry onions and garlic in warm oil in heavy skillet, but don't brown. Add in remaining ingredients. Cover and cook 15 min. Uncover and cook another 40 min till vegetables are tender and juice is thickened. I have made this countless times and the thing about it, is you can vary it according to whatever is in the garden. Experiment with it. I have even found which okra is a great addition. If you do not have zucchini, try the yellow squash, or possibly a mix of the two works great! Enjoy and have fun!
