- 18 lbs chicken meat - large dice
- 10 lbs spicy sausage - medium chunks
- 1 quart chopped onions
- 1 quart chopped celery
- 12 chopped green/red peppers
- 1 cup minced garlic
- 4 quarts chicken stock
- 4 quarts drained chopped tomatoes
- 1/4 cup cayenne pepper
- 1/4 cup thyme
- 1/4 cup oregano
- 15 bay leaves
- 2 cups vegetable oil
- 10 lbs cooked rice
Инструкции
- Heat up a little oil and saute sausage to render off fat - drain excess fat before adding the chicken meat, onions, peppers, and celery. Cook until half done.
- Add garlic.
- Put 1/3 mixture aside and cool to hold for dinner batch.
- Meanwhile - to the miix still working - add 2/3 of the tomatoes, seasoning and stock and cook to bring to tempurature and meld flavors.
- Add 2/3 of rice and bring back to tempurature.
- Garnish with fresh chopped parsley.
