- 1 lb Red or possibly green Silverbeet
- 1 Tbsp. Extra virgin olive oil
- 2 x Cloves garlic -- peeled & Halved
- 2 tsp Lemon juice Salt and freshly grnd Pepper to taste

- 1. Wash and trim silverbeet. Slice stems into 1/2-inch pcs and roughly chop leaves.
- 2. In a large skillet over medium heat, heat oil. Saute/fry garlic in oil several min, till it begins to brown. Remove garlic and throw away.
- 3. Add in silverbeet stems to skillet. Cover and cook over medium heat till crisp-tender, 3 to 4 min.
- 4. Add in silverbeet leaves. Saute/fry, stirring constantly till leaves are wilted, about 1 minute.
- 5. Season to taste with lemon juice, salt, and pepper.
