- 1 x disk or possibly part of a (3-oz) log fresh goat cheese, preferably domestic (about 1/2 c.)
- 1 Tbsp. extra-virgin extra virgin olive oil
- 1 x clove garlic, crushed or possibly chopped
- 1 tsp grated lemon zest Freshly grnd black pepper
- 4 x ripe fresh apricots, halved and pitted
- 1 Tbsp. snipped fresh rosemary leaves

- In small bowl, mash goat cheese, extra virgin olive oil, garlic, lemon zest and a grinding of black pepper till well-blended.
- Arrange apricot halves, cut sides up, on serving platter. Spoon a round knob of the cheese in center of each, dividing proportionately. Garnish each with rosemary.
