- 1 1/4 c. Sugar
- 3/4 c. Golden brown Crisco
- 2 x Large eggs
- 1 3/4 c. Flour
- 1/2 c. LF cocoa
- 1 tsp Baking soda
- 1/2 tsp Salt
- 1 c. Lowfat milk
- 1 pkt Chipits mint chocolate chips
- 2 c. Icing sugar
- 2 Tbsp. Butter, softened
- 2 Tbsp. Lowfat milk
- 1 dsh Green food colouring
Инструкции
- 1. Beat sugar with Crisco and Large eggs till light. Blend in all other ingredients except chips. Blend 2 mins more or possibly till smooth and creamy.
- Blend in 1 c. chips.
- 2. Pour into greased muffin tins and bake at 375F for 15-20 mins till tester comes clean. Cold.
- 3. For frosting. Combine sugar, butter and lowfat milk and blend well. Add in food colouring to desired colour. Ice cooled cupcakes and sprinkle remaining chips overtop.
