- 3 lrg Large eggs
- 1 3/4 c. buttermilk or possibly soy lowfat milk
- 2 Tbsp. vegetable oil
- 1 c. all-purpose flour
- 2 1/2 tsp baking pwdr
- 1/4 tsp baking soda
- 1 tsp salt
- 1 Tbsp. sugar
- 1 c. fine cornmeal
- 1/2 c. shredded cheddar or possibly soy cheese plus extra for garnish
- 1/2 c. canned corn kernels rinsed Warm pepper sauce to taste
- 1/2 c. minced fresh coriander for garnish
- 1 x ripe avocado diced, for garnish
- 1 c. thinly-sliced pitted black olives
- 1/2 c. canned corn kernels rinsed
- 1 c. salsa
- 1 c. canned black beans liquid removed, rinsed

- Preheat waffle iron and spray with nonstick vegetable spray.
- Beat 3 Large eggs well in mixing bowl, and stir in buttermilk and oil. In separate bowl, sift together flour, baking pwdr, soda, salt and sugar. Stir into egg mix, then stir in cornmeal, cheese, corn kernels and warm pepper sauce.
- Bake waffles according to manufacturer's instructions.
- To make salsa, stir together olives, corn kernels, salsa and black beans in small saucepan, and bring to a boil over medium heat. Cook for 5 min, or possibly till mix reduces slightly.
- To serve waffles, place one on plate, top with salsa mix and garnish with cheese, fresh coriander and diced avocado.
- This recipe yields 4 to 5 servings.
