- 1/2 c. Extra virgin olive oil
- 2 lrg Red peppers
- 1/3 c. Lemon juice
- 2 lrg Green peppers
- 2 Tbsp. Minced Italian parsley
- 3/4 tsp Salt
- 1 Tbsp. Dry oregano
- 1/8 tsp Pepper
- 3 1/2 lb Broiler/fryer chicken
Инструкции
- Combine all ingredients except chicken and vegetables. Add in chicken and marinate at room temperature for 1 hour, turning once. Drain and bake chicken at 400 degrees for 35 min. Cut peppers into 1/2-inch thick rings. Saute/fry 8 min. Spoon peppers around chicken.
- Makes 4 to 6servings.
