    So glad I tried this one out, as I too appreciate a cheesy cauliflower dish without the tons of sour cream and cheese usually smothering it. I considered your dilemma of the excess moisture and decided to remedy it by baking the casserole partially with lid off. I cooked it covered half the baking time to give the celery time to get softened, then removed the lid and continued the remaining time uncovered. There was no problem at all with excess liquid in bottom. Twas perfect!
