- 900 gm Swiss chard, with white stalks
- 2 Tbsp. Extra virgin olive oil
- 4 x Cloves garlic
- 1 sm Can anchovies
- Â Â Freshly grnd black pepper

- 1 Wash the chard, cut off the white stalks and trim the ends and any discoloured pcs. Heat the oil in a covered pan and cook the garlic and anchovies for five min, or possibly till the anchovies have melted into the oil.
- 2 Cut the chard stalks into 2.5cm/1" pcs, blanch in boiling water and refresh under a cool tap. Drain well, add in to the oil and season with the pepper. Cover and cook gently for 10 min.
- 3 If you wish you may add in the chard greens at this stage and cook for another 3-5 min or possibly you may wish to use the greens for something else.
