From what I can taste, this recipe very closely simulates Mama Mandolo's Chicken Soup recipe at the Carrabba's restaurants. I wan't sure how much "1/2 bunch of parsley" was, but I got Italian parsley and put in what I thought my husband would tolerate (he doesn't like green "things"). It was wonderful! I am keeping this in my recipe box forever!!!

- 2 cups chopped leftover chicken breast - shredded
- 1 stalk celery â chopped
- ½ cup carrots â chopped
- 1 medium onion â sliced
- 2 cloves garlic â chopped
- ½ bunch parsley â chopped
- 1 vine ripe tomato â chopped
- ½ jalapeño â chopped with seeds
- 2 cups leftover mashed potatoes
- 5 cups chicken broth
- Olive oil
- Few dashes of ground turmeric
- Grated Romano cheese

- In a soup pot place 3 tablespoons of olive oil and the celery, carrots, onion, garlic, parsley, tomato and jalapeño. Let the veggies sauté for a few minutes until the onion is clear. Add the chicken broth and the mashed potatoes and let simmer for a few minutes.
- Carefully, with a hand masher, mash the veggies in the soup. Add the chicken and let simmer for a few more minutes on low. Add a few dashes of turmeric.
- Garnish with grated Romano cheese.
- This soup is easy and a great way to use your leftovers.
