- 2 Tbsp. Butter
- 2 x Beef fillets - (6 to 8 ounce ea) julienned
- 1 c. Chopped onions
- 1 lb Smoked sausage cut 1/4" slices
- Â Â Salt to taste
- Â Â Freshly-grnd black pepper to taste
- 1 lb Peeled crawfish tails
- Â Â Bayou Blast see * Note
- 1 Tbsp. Minced garlic
- 2 c. Heavy cream
- 1 dsh Worcestershire Sauce
- 1 dsh Crystal Warm Sauce
- 1/2 c. Minced green onions
- 8 x Cheesy biscuits

- In a large saute/fry pan, heat one Tbsp. of the butter. Season the beef with salt and pepper. Add in the beef to the melted butter and quickly saute/fry for 2 min. Remove the beef from the pan and set aside.
- Add in the remaining butter and heat. Add in the onions. Season with salt and pepper. Saute/fry the onions for 2 min. Add in the sausage and continue to saute/fry for 2 min. Season the crawfish tails with Bayou Blast. Add in the crawfish to the pan and saute/fry for 2 min. Add in the garlic and cream. Season the mix with salt, pepper, Worcestershire Sauce and warm sauce. Bring the liquid to a boil and reduce to a simmer. Simmer the mix for 4 to 6 min, stirring occasionally. Add in the onions and reserved fillet.
- Serve over the cheesy biscuits.
