- 1/2 c. cream cheese (regular or possibly light) room temperature
- 2 x baguettes - (6" to 8" long) split lengthwise
- 4 tsp small capers liquid removed
- 4 slc red onion - (paper-thin) halved if large
- 4 slc large tomato thin slices
- 8 slc peeled English cucumber thin slices
- 4 slc smoked salmon - (abt 4 ounce total) thin slices
- Â Â Freshly-grnd black pepper to taste

- Spread cream cheese on cut sides of baguettes, dividing proportionately. Sprinkle capers proportionately over cheese. Use back of spoon to lightly press in place.
- Over 1 side of each, arrange onion, tomato, cucumber and salmon, again dividing proportionately. Sprinkle with pepper.
- Close sandwiches. Lightly press together. Cut in half (secure with toothpicks, if needed). Serve within 1/2 hour.
- This recipe yields 2 servings.
