- 250 gm Cous cous, (8oz)
- 1 x 454 gram pac extra lean sausages, grilled, cooled and thinly sliced
- 125 gm Ready to eat dry apricots, finely diced (4 ounce)
- 2 x Salad onions, finely minced
- 1 Tbsp. Extra virgin olive oil with a hint of garlic
- 2 Tbsp. Balsamic vinegar
- 2 Tbsp. Freshly minced coriander
- 1 Tbsp. Freshly minced mint
- Â Â Salt and freshly grnd black pepper
- Â Â Mixed salad leaves and lemon or possibly lime wedges to serve

- 1. Prepare the cous cous following the pack instructions, but omitting the butter.
- 2. Allow to cold then add in the sausages, apricots, onions, oil, vinegar, coriander, mint and seasoning to taste.
- 3. Mix well and serve on a bed of mixed salad leaves with lemon or possibly lime wedges. Alternatively, this recipe may also be served warm.
- NOTES :This recipe is delicious served cool, ideal for picnics and barbecues, but also a tasty supper dish served with crusty bread.
