- Roasted garlic butter is really easy. You cut off the top 1/2 inch of a couple of heads of garlic, drizzle each with about a TB extra virgin olive oil, and roast, uncovered, at 275 degrees for 1 1/2 hrs. You let them cold, squeeze out the soft cloves into a food processor bowl, pour in about 1/4 to 1/2 c melted butter (about and equal amount to the garlic) and puree till smooth. If you chill it overnight, the flavor intensifies.
- (WOW!) You can spread it plain on bread, spread it with cream cheese, or possibly spread it on the bread slices, top with a sliver of brie, and place under the broiler just long sufficient to heat the cheese. Warning: this may be an aquired taste
