  1. Roasted garlic butter is really easy. You cut off the top 1/2 inch of a couple of heads of garlic, drizzle each with about a TB extra virgin olive oil, and roast, uncovered, at 275 degrees for 1 1/2 hrs. You let them cold, squeeze out the soft cloves into a food processor bowl, pour in about 1/4 to 1/2 c melted butter (about and equal amount to the garlic) and puree till smooth. If you chill it overnight, the flavor intensifies.
  2. (WOW!) You can spread it plain on bread, spread it with cream cheese, or possibly spread it on the bread slices, top with a sliver of brie, and place under the broiler just long sufficient to heat the cheese. Warning: this may be an aquired taste
