- 16 ounce Spiral pasta
- 2 c. Whipping cream
- 1 Tbsp. Butter or possibly margarine
- 8 ounce Mexican cheese blend or possibly cheddar cheese, shredded
- 1 sm Onion, minced
- 1 x Clove garlic, chopped
- 5 Tbsp. Extra virgin olive oil or possibly vegetable oil, divided
- 2 med Zucchini, julienned
- 2 med Yellow summer squash, julienned
- 1Â 1/4 tsp Salt, divided
- 1/8 tsp Pepper
- 1 lb Boneless skinless chicken breast halves, julienned
- 1/4 tsp Dry basil
- 1/4 tsp Dry marjoram
- 1/4 tsp Dry savory
- 1/4 tsp Dry rosemary, crushed
- 1/8 tsp Rubbed sage
Инструкции
- Cook pasta according to package directions. Meanwhile, heat cream and butter in a large saucepan till butter melts. Add in cheese; cook and stir till melted. Rinse and drain pasta; add in to cheese mix. Cover and keep hot. In a skillet over medium heat, saute/fry onion and garlic in 3 Tbsp. oil till onion is tender. Add in squash; cook till tender. Add in 1 tsp. salt and pepper; remove and keep hot. Add in remaining oil to skillet; cook chicken with herbs and remaining salt till juices run clear.
- Place pasta on a serving platter; top with chicken and squash.
- Yield: 8servings.
- NOTES : "This is a special dish which we enjoy often. A bed of noodles is covered with a creamy cheese sauce, tender squash and strips of chicken which've been stir-fried with flavorful herbs. It's delicious and pretty, too!"
