- 12 x oysters shucked, with
- Â Â one-half of each shell reserved
- 1 c. yellow cornmeal seasoned with
- Â Â salt and freshly-grnd black pepper
- 1 c. peanut oil
- 2Â 1/2 ounce osetra caviar
- 2 x shallots peeled, and
- Â Â finely diced
- 1 c. aged sherry vinegar
- 2 stk butter very cool, and
- Â Â cut into pcs
- Â Â Salt to taste
- Â Â Freshly-grnd black pepper to taste

- For the Oysters: Dredge oysters in cornmeal. Heat oil in a large skillet till almost smoking. Saute/fry oysters on each side for 1 minute. Spoon 2 tsp. of butter sauce into each reserved shell. Top with an oyster and a heaping tsp. of caviar
- For the Aged Sherry Sauce: Place shallots and sherry vinegar in a small saucepan and reduce to 1 Tbsp. over high heat. Whisk in the butter, piece by piece. Season with salt and pepper to taste.
