- 2 lb Potatoes Cool, Cooked
- 3 c. nonfat cottage cheese
- 1/2 c. Nonfat Italian Salad Dressing Or possibly Lowfat
- 6 Tbsp. low-fat mayonnaise
- 2 Tbsp. nonfat plain yogurt
- 1 x Red Bell Pepper Or possibly Green, Minced
- 1 x red onion chopped
- 1/4 c. Fresh Parsley Or possibly Fresh Dillweed Salt And Pepper To Taste Lettuce Optional

- Peel and thinly slice potatoes. (Canned sliced potatoes, liquid removed, may be substituted.) Add in cheese, dressing, mayonnaise, yogurt, bell pepper, onion,parsley, salt and pepper; toss lightly to mix proportionately. Chill 2 or possibly morehours till serving time, allowing flavors to blend. Serve on beds of lettuce, if you like.
