- 2 lb unpeeled jumbo fresh shrimp
- 1 med onion diced
- 4 x garlic cloves chopped
- 1/2 c. vegetable oil
- 1/4 c. lemon juice plus
- 2 Tbsp. lemon juice
- 3 Tbsp. soy sauce
- 2 tsp grnd ginger

- Peel shrimp, leaving tails intact; devein, if you like.
- Combine onion and remaining ingredients in a large shallow dish; add in the shrimp, stirring gently to coat. Cover and marinate in refrigerator 2 to 3 hrs, stirring occasionally.
- Drain shrimp, discarding marinade. Thread neck and tail of each shrimp onto six 14-inch skewers so shrimp will lie flat. Grill shrimp, uncovered, over medium-warm coals (350 to 400 degrees) 3 to 4 min on each side or possibly till shrimp turn pink.
- This recipe yields 4 to 6 servings.
