- 1 med onion, slice thin
- 1/4 tsp garlic, mince
- 1/2 Tbsp. olive or possibly canola oil
- 1 x 14 1/2 oz ready-cut tomatoes, or possibly
- 2 c. fresh tomatoes, chop
- 16 ounce frzn mixed italian-style, vegetables
- 1 c. tomato or possibly v8 juice
- 1 c. reduced-sod chicken or possibly beef, broth
- 1 1/2 tsp sugar
- 1 tsp Italian seasoning
- 1 Tbsp. fresh basil, chop (1 to 2)
- 1/8 tsp pepper
- 1/2 c. macaroni noodles
- 1 x 15 oz ca great northern beans, drain
- 1/4 c. parmesan, shred

- In large soup pot, sauteeonion and garlic in oil over medium heat till onion is soft. Add in tomatoes, veggies, tomato juice, broth, sugar and seasonings.
- Bring to boil and add in macaroni and beans. Reduce heat and cover. Simmer approximately 20 min. If soup is too thick add in more tomato juice or possibly water.
- Serve with 1 tb Parmesan sprinkled on top.
