- 1/4 c. Pure Spanish extra virgin olive oil
- 1 sm Onion -- finely minced
- 1 sm Green bell pepper -- finely Minced
- 2 x Cloves garlic -- finely Minced
- 1 c. Tomatoes, canned -- liquid removed And minced Or possibly prepared tomato sauce
- 1/2 c. Pimiento -- liquid removed Finely minced
- 2 Tbsp. Dry sherry Salt -- to taste Fresh grnd black pepper -- To taste Large eggs-----
- 8 lrg Large eggs
- 4 Tbsp. Butter -- salted Salt -- to taste Fresh grnd black pepper -- To taste
- 1 Tbsp. Minced parsley -- finely Minced For garnish

- Preheat oven to 350 . In a medium-size skillet over low heat, heat the oil till it is fragrant, then cook the onion, bell pepper, and garlic, stirring, till tender, 8 to 10 min. Add in the tomatoes, pimientos, and sherrty, cook till thickened, 15 min, and season with salt and pepper.
- Lightly oil 4 ramekins or possibly au gratin dishes and divide th sauce among them.
- For each dish, break two Large eggs into a saucer, slide them on top of the tomato mix, and drizzle with 1 Tbsp. melted butter. Bake till the whites are set and the yolks are still soft, 10 to 12 min. Sprinkle with salt, pepper, and parsley, and serve immediately from the baking dishes. (Place each on a serving plate, to protect the table).
