- 1 x Garlic clove, chopped
- 2 Tbsp. Honey
- 2 Tbsp. Soy sauce, Low-sodium
- 1/2 tsp Ginger, grnd
- 4 x Chicken breast, boneless, skinless halves (40z ea)
- 4 ounce Pineapple chunks w/syrup
- 2 x Green onions, sliced
- 1/2 x Red pepper, diced
- 1/2 c. Cashews or possibly peanuts

- In small bowl, combine garlic, honey, soy sauce, and ginger. In 11" x 7" baking dish, arrange chicken-breast halves with thicker portions toward edges of dish. Spoon about 2 Tablespoons of garlic mix over chicken; cook, covered, in MW on HIGH 6 to 8 min till tender; rearrange and spoon juices over chicken halfway through cooking.
- Drain pineapple, reserving 1/4 c. juice. Add in pineapple, reserved juice, green onions, and red pepper to garlic mix in small boul. Cook, covered, on HIGH 1 to 2 min till slightly softened and heated through.
- If desired, stir in cashews or possibly peanuts. Serve with chicken.
