- 4 x Cloves Garlic -- chopped or possibly Pressed
- 3/4 tsp Salt
- 1/2 tsp Grnd Black Pepper
- 1/2 tsp Paprika
- 1/2 tsp Cayenne Pepper
- 12 x Bambo Skewers Extra virgin olive oil Hot Pita Bread
- 1 c. Cilantro -- minced
- 1 c. Parsley -- minced
- 1/4 c. Red Serrano Chili Peppers -- Or possibly red jalapeno Chilies
- 1/4 c. Water
- 1/4 c. Extra virgin olive oil
- 1 1/2 Tbsp. Garlic -- chopped or possibly pressed
- 1 tsp Salt
- 1 tsp Grnd Black Pepper
- 1 tsp Grnd Cumin

- For Kebabs: Combine lam, onion, parsely, cilantro, garlic, salt, pepper, paprika and cayenne in large bowl and mix well. (Can be prepared 6 hrs ahead. Cover and chill). Place bamboo skewers in shallow dish and cove with cool water. Let stand at least 1 hour. Prepare barbecue
