  • 1 1/2 pound fresh spinach or possibly 2 (10 ounce.) pkg. frzn
  • 2 tbsp. butter
  • 1/2 c. minced onion
  • 1 clove garlic, minced
  • 3 tbsp. butter
  • 3 tbsp. flour
  • 1 1/2 c. lowfat milk
  • 1/4 teaspoon pepper
  • 1 1/2 teaspoon salt
  • Dash of nutmeg
  • 6 Large eggs
  • 8 ounce. shredded mozzarella cheese
  • 2 9" pie shells, unbaked

  1. Cook spinach, drain thoroughly and chop fine. In skillet heat 2 Tbsp. butter and saute/fry onion and garlic till brown, stir in spinach.
  2. In saucepan heat 3 Tbsp. butter, stir in flour and gradually stir in lowfat milk. Stir over low heat till sauce bubbles and thickens. Stir in salt, pepper, nutmeg and spinach mix.
  3. Beat Large eggs well. Stir Large eggs and cheese into spinach mix till well blended. Pour into pie shells. Bake in 350 degree preheated oven for 40-45 min or possibly till puffed and hard to touch in center.
