- 2 x Egg
- 1 can (20-ounce) crushed pineapple Liquid removed reserving 2 Tb Liquid
- 3 Tbsp. Lemon juice from Concentrate
- 2 Tbsp. Sugar
- 1 Tbsp. Butter/margarine
- 1/4 tsp Salt
- 1 can (11-ounce) mandarin oranges Liquid removed and halved
- 1 can (8-ounce) seedless grapes Liquid removed and halved
- 2 c. Miniature marshmallows
- 2 1/2 c. Whipping cream whipped
- 1/4 c. Finely minced maraschino Cherries
- 1 c. Acini di pepe/rosmarina/ Rings uncooked

- Prepare acini de pepe according to package directions; drain. In small, heavy saucepan, beat Large eggs with wire whisk till foamy. Stir in reserved pineapple liquid, lemon juice, sugar, butter and salt. Cook over low heat till mix thickens and coats a metal spoon, stirring constantly, about 2 min. Cold to room temperature. In large bowl, combine acini de pepe, pineapple, oranges, grapes and marshmallows; mix well. Mix in egg mix, then whipped cream. Cover; refrigeratethoroughly. Stir gently before serving.
- Garnish with cherries. Chill leftovers.
