- 4 x Large eggs
- 1 tsp salt
- 1/4 tsp pepper
- 1 c. flour
- 3/4 c. lowfat milk
- 1/4 c. water
- 1/4 c. butter melted
- 1 bag spinach (cooked) finely minced
- 3 Tbsp. butter flour
- 1 c. warm lowfat milk
- 1 tsp salt
- 1/4 tsp pepper
- 1 pch nutmeg
- 1 pch cayenne
- 1 Tbsp. Dijon mustard
- 1/2 tsp Worcestershire
- 4 x Large eggs separated
- 1/4 tsp cream of tartar
- 1Â 1/2 c. grated old cheddar
- 12 x thin slices ham

- Makes crepes (12). In pan heat butter, whisk in flour and cook about 5 minutes. Don't brown. Cold slightly. Beat egg whites with cream of tartar till hard; stir 1/4 into mix in pan; then mix in remaining egg whites. Mix in 1 c. cheese and minced spinach. Arrange crepes on counter. On each place 1 slice ham; gently spoon filling down centre. Loosely fold the two sides of crepe over filling and place seam side down in buttered 13x9 dish. Crepes may be touching but do not overcrowd. Sprinkle with remaining cheese. Bake at 375 for 20-25 minutes till puffy and golden brown. Should be served right out of the oven.
