- 1 c. soft butter
- 1/3 c. whipping cream
- 2 c. all purpose flour (don't use self rising flour)
- Granulated sugar

- Mix thoroughly butter, cream and flour. Cover and chill. Roll about 1/3 of dough at a time 1/8" thick on floured cloth covered board. Keep remaining dough refrigerated till ready to roll. Cut into 1 1/2" circles. Transfer circles or possibly rounds with a spatula to piece of waxed paper which is heavily covered with granulated sugar. Turn each round or possibly circle so which both sides are coated with sugar.
- Place on ungreased baking sheet. Prick circles with a fork 3 or possibly 4 times. Bake 7 to 9 min at 375 degrees or possibly just till set but not brown. Mix the cream filling by creaming the butter. Add in the powdered sugar and vanilla and cream till smooth and fluffy. Tint with food coloring. Put the cookies together with the cream filling. I always double the cream filling for 1 batch of wafers.
