Рецепт Cornish Hens Basque

• 4 x Rock Cornish hens - (abt 16 ounce ea)
• 1/4 c. flour
• 2 tsp salt
• 1/2 tsp freshly-grnd black pepper
• 1/4 tsp chili pwdr
• 2 sm onions sliced
• 2 c. cubed peeled eggplant
• 1 x green pepper seeded, and cut into 1/2" strips
• 4 ounce mushrooms sliced
• 1 jar minced pimiento - (2 ounce)
• 1 x garlic clove minced
• 1 Tbsp. extra virgin olive oil
• 1 lrg bay leaf
• 1/2 tsp leaf thyme
• 1 tsp leaf basil
• 1 tsp salt
• 1/2 tsp freshly-grnd black pepper
• 3/4 c. dry white wine or possibly chicken broth
