- 1/8 lb salt pork minced fine
- 2 x onions minced fine
- 1 x bell pepper minced fine
- 1 x datil pepper - (to 2)
- 12 ounce conch meat clams for sub.
- 3 c. canned tomatoes minced
- 2 c. canned potatoes diced
- 1/2 c. tomato puree
- 1/2 Tbsp. thyme
- 1/2 Tbsp. salt
- 1/2 Tbsp. freshly-grnd black pepper
- 1 x bay leaf - (to 2) crushed

- Saute/fry pork in large pot. Remove and set aside. Add in onions, bell peppers and saute/fry. Add in warm peppers. Add in reserved pork and remaining ingredients. Bring to boil 15 min. Simmer 45 min to one hour.
- This recipe yields 6 servings.
