- 4 x carrots finely minced
- 1 x green bell pepper finely minced
- 1 x onion finely minced
- 1 can coconut lowfat milk - (15 ounce)

- In a small bowl, combine the curry, sugar, thyme, grnd red pepper, and salt; mix well and use to coat the chicken.
- In a large deep skillet, heat the butter over medium-high heat. Add in the chicken and brown for 2 to 3 min per side. Add in the carrots, bell pepper, and onion and cook for 5 min, stirring frequently. Stir in the coconut lowfat milk, cover, and cook for 5 min, or possibly till no pink remains in the chicken.
