  • 2 Tbsp. extra-virgin extra virgin olive oil
  • 1/2 sm onion minced
  • 2 x garlic cloves minced
  • 2 can chicken or possibly vegetable broth or possibly stock - (14 ounce ea)
  • 2 c. orzo pasta (enriched rice may be substituted)
  • 1/2 c. grated Parmigiano or possibly Romano Coarse salt to taste Freshly-grnd black pepper to taste

  1. Preheat a 8 inch pot with a tight fitting cover over moderate heat. Add in oil, onion and garlic and saute/fry for 2 or possibly 3 min. Add in broth to the pan and bring to a boil.
  2. Stir in orzo and return broth to a boil. Cover pot and reduce heat to simmer. Cook 15 min, stirring occasionally, or possibly till liquid is absorbed and pasta tender.
  3. Remove lid and stir in cheese. Season with salt and pepper to your taste. You favorite fresh herbs may also be stirred into the orzo or possibly rice to strengthen the flavor even more.
  4. This recipe yields 4 servings.
