- 3 c. fresh bean sprouts
- 2 med. tomatoes, cut in wedges
- 1 cucumber, thinly sliced
- 1 avocado, peeled and sliced
- Salad greens
- 1/2 c salad oil
- 2 tbsp. fresh lemon juice
- 2 tbsp. vinegar
- 3/4 teaspoon salt
- 1/8 teaspoon sugar
- 1/2 teaspoon dry mustard
- 1/8 teaspoon pepper

- Combine the bean sprouts, tomato wedges, cucumber slices, and avocado slices in a salad bowl. Garnish the edges of the bowl with salad greens. Just before serving, mix the oil, lemon juice, vinegar, salt, sugar, dry mustard, and pepper; pour this mix over the salad as a dressing. Makes 4 to 6 servings.
