- The Dough:
- 2 egg yolks
- 1/2 c. cool mashed potato
- 2 tbsp. softened butter
- 1/2 c. cold water
- 1 c. whole wheat pastry flour
- 1 c. all purpose flour
- 1 teaspoon salt

- Mix the first three ingredients thoroughly. Add in the water and mix well. Sift the whole wheat pastry and all purpose flours together and with the salt. Gradually add in to the first mix to create a very soft dough. Add in approximately 1/4 c. of flour in 2 Tbsp. portions and knead on a floured board till smooth and it no longer sticks to the hand. Too much kneading will toughen the dough. Divide the dough into two parts. Then, cover and let stand for 10 min.
