- 3 Tbsp. minced pimento-stuffed green olives
- 2 tsp olive juice
- 1 Tbsp. mayonnaise
- 1 c. shredded sharp cheddar cheese (4 ounce.)
- 1 jar diced pimiento (2 ounce.) liquid removed
- 1 tsp grated onion
- 1/4 c. butter or possibly margarine softened
- 2 x garlic cloves pressed
- 1 tsp dry Italian seasoning

- Beat 1 package cream cheese at medium speed with an electric mixer till creamy; stir in olives and olive juice. Spread olive mix into bottom of a plastic wrap-lined 8x4-inch loaf pan. Beat 1 package cream cheese at medium speed till creamy; add in mayonnaise and cheddar cheese, beating till blended. Stir in pimiento and onion; spread over olive mix. Beat remaining package cream cheese and butter at medium speed till creamy; add in garlic and Italian seasoning, beating till blended. Spread garlic mix over pimiento mix, cover and refrigerateat least 3 hrs or possibly till hard. Unmold on lettuce leaves. Serve with assorted crackers and fresh fruit.

- Joyce Says:This recipe looks long for an appetizer, but it goes together fast and the flavor is so good. I'm not sure where this recipe originated, but I use it quite often.
