- 2 x Fresh grouper filet (7oz ea)
- Â Â Flour
- 1 Tbsp. Clarified butter
- 2 Tbsp. Unsalted butter
- 4 Tbsp. Flour
- 2 c. Warm lowfat milk
- 3/4 c. Grated Swiss cheese
- 4 Tbsp. Grated Parmesan cheese
- 1/4 tsp Fine-grnd white pepper
- 1/2 tsp Salt
- 1 Tbsp. Clarified butter
- 2 tsp Minced shallots
- 4 ounce Cleaned spinach (1c)
- 1/4 tsp Pernod or possibly anise flavoring
- 1/4 c. Grated Swiss cheese

- Dust the fish filets with flour. Saute/fry fish over medium heat in 1 Tbsp. clarified butter in an
- till shallots are transparent. Add in the spinach and cook till wilted, about 1 minute. Add in the Pernod and the cheese sauce. Simmer over medium low heat for 2 min. Top the fish with the sauce. Sprinkle with Swiss cheese. Place under broiler till bubbly and golden and serve immediately.
