- Dust the fish filets with flour. Saute/fry fish over medium heat in 1 Tbsp. clarified butter in an
- till shallots are transparent. Add in the spinach and cook till wilted, about 1 minute. Add in the Pernod and the cheese sauce. Simmer over medium low heat for 2 min. Top the fish with the sauce. Sprinkle with Swiss cheese. Place under broiler till bubbly and golden and serve immediately.
