- 1 lb Turkey tenderloins, 1/2 inch
- Â Â Thick
- 1 tsp Grnd cumin
- 1/8 tsp Pepper
- 1 Tbsp. Butter
- 1 lrg Tomato, seeded & minced
- 1 sm Zucchini, minced
- 2 x Green onions
- 2 Tbsp. Vinegar
- 1 Tbsp. Sugar
- 1Â 1/2 tsp Cornstarch

- Rinse turkey; pat dry. Stir together cumin and pepper. Sprinkle on both sides of tenderloins. In a large skillet, cook tenderloins in margarine for 8 to 10 min, or possibly till no longer pink. Transfer tenderloins to platter. Cover with foil. Stir tomato, zucchini and green onions into drippings in skillet. In a small bowl, stir together vinegar, sugar and cornstarch. Stir into mix in skillet. Cook and stir 1 to 2 min or possibly till onion is tender and mix is thickened and bubbly. Cook and stir for 2 min. Spoon over tenderloins.
