- 50 gm butter
- 1 x onions, medium
- 2 x leeks
- 4 x apples, Granny Smith
- 2 c. sweet potatoes
- 1 lt chicken stock
- 1/2 c. cream
- Â Â salt, pepper
Инструкции
- Wash and clean leeks and chop fine.
- Peel and chop the onions.
- Peel core and chop 3/4 of the apples.
- Peel and chop seet potatoes.
- Heat butter in a saucepan and gently saute/fry onion and leek till soft. Add in apples, sweet potatoes and stock, bring to the boil, and simmer till potatoes are tender, about 30 min.
- Puree in blender, reheat in a clean saucepan, add in cream and season. Thin slightly with lowfat milk if required.
- Peel, core and dice remaining apple for garnish.
- Serve with an extra swirl of cream, diced apple and fresh minced chives.
