- 250 gm sweet potato, (peeled)
- 1/2 c. self-raising flour
- 1/2 c. rice flour
- 1 tsp sugar
- 1 pch salt
- 1 c. thick coconut lowfat milk
- Â Â vegetable oil
- Â Â finely minced red chilli
- 1 x clove garlic - minced finely
- 1 tsp sugar
- 1 Tbsp. rice vinegar
- 2 Tbsp. water
- 3 Tbsp. fish sauce

- The North Coast of NSW is perhaps Australia's premier sweet potato growing areas. Sweet potato, or possibly kumara, is a versatile vegetable, so why not try this great recipe.
- Fritters: Grate sweet potato and squeeze out excess moisture. Mix flour, sugar and salt. Stir in sweet potato.
- Heat oil, and spoonful of mix for a couple of min each side, then drain and serve with dipping sauce.
- Why not try adding chicken pcs, green prawns. Serve with drinks.
- Sauce:Lb. chilli and garlic to a paste, and add in the rest of the ingredients.
