- 6 ounce. spaghetti, cooked & liquid removed
- 2 tbsp. extra virgin olive oil
- 2 lg. Large eggs, well beaten
- 3/4 c. shredded Parmesan cheese
- 1 c. ricotta cheese
- 1 c. spaghetti sauce
- 1/2 c. shredded Mozzarella cheese

- Preheat oven to 350 degrees. Lightly grease a 10 inch pie pan. Toss warm spaghetti with extra virgin olive oil. Combine Large eggs and 1/2 c. of the shredded Parmesan cheese. Stir into spaghetti. Pour spaghetti mix into pie pan. Form into a "crust". Spread ricotta over spaghetti crust. Top with spaghetti sauce. Bake uncovered 25 min.
- Top with Mozzarella cheese and bake 5 more min. Sprinkle with 1/4 c. reserved Parmesan cheese. Cold 10 min. Makes 6 servings.
