- Old Bay Seasoning 1/4cup
- Milk, Whole 41/2gal
- Dry Sherry 3qts
- Ketchup 1qt
- Worecestershire sauce 2cups
- Shrimp, cooked 20lbs
- Sea Legs 20lbs
- Scallops, Cooked 20lbs
- Paprika 1/4cup
- Salt to taste
- Dill, Fresh 2cups

- Combine butter, flour, and in a saucepan (making a roux)
- Cook for two minutes stirring frequently
- Add leaks, onions, celery, carrots, and garlic continues to cook stuirring frequently for an additional two minutes
- Slowly pour in milk and bring mixture to a boil, then reduce to a simmer
- Add sherry, paprika, dill, ketchup, Worecestershire sauce and salt to taste.
- Add seafood to the mixture and heat thoroughly
