- 7 ounce Roasted red peppers, liquid removed
- 1 Tbsp. Extra virgin olive oil
- 1/3 c. Minced onion
- 1Â 1/2 tsp Garlic, minced
- 1/2 tsp Tomato paste
- 1/8 tsp Balsamic vinegar
- Â Â pn Cayenne pepper
- 1 Tbsp. Lowfat sour cream

- Chop peppers and place in blender. Heat the oil in a small skillet over low heat. Add in onion and garlic to skillet and saute/fry till onion is translucent/soft, about 3 min. Scrape contents of skillet into blender. Add in tomato paste, vinegar, cayenne pepper and sugar. Blend till a smooth puree. Add in lowfat sour cream and blend till combined. Season puree to taste with salt and pepper.
