- 3/4 cup oat flour (I used sprouted & dehydrated)
- 1/2 cup almond flour
- 1/2 cup cashew flour
- 1 Tbsp ground golden flax seeds
- 2 tsp olive oil
- 3 medjool dates, pitted and soaked
- 1/2 zucchini, sliced thin
- 1/2 tsp sea salt
- 1 tsp onion powder, to taste
- 1/2 cup water (as needed to blend)
- Sauce
- 1 cup cashews (soaked 2 hours)
- 1 cup water
- 1/4 avocado
- 1 tsp coconut water vinegar (or apple cider vinegar)
- 1/4 tsp sea salt
- 1 tsp garlic powder, to taste
- Veggies
- 1/2 red bell pepper seeded and chopped
- 1/2 Zucchini (spiralized)
- 1/2 zucchini, finely chopped
- 2 portobello mushrooms, coarsely chopped
- 1 cup mushrooms (baby bella, shiitake, oyster, or your favorite combo), sliced
- 2 carrots peeled, finely chopped, or grated
- 1/2 cup peas, fresh (or frozen)
- add any variety of veggies you like
- 1 Tbsp parsley, chopped (and/or dill)
- 1 tsp onion powder
- 1/2 tsp sea salt, to taste
